Cafeteria changes lunch protocols

The Tortilla line is now on the leftmost side of the kitchen area; Main Plate is on the right.

Recent changes were made in the Penn-Trafford High School cafeteria. Specifically, the Main Plate and Tortilla lines have switched places and the deli station is temporarily closed.

“Main [Plate] is now on the right side of the cafeteria… [and] Tortilla is now on the left side,” Aramark Food Service Director Terry Chavara stated.

The lines were switched on Jan. 2. P-T principal Tony Aquilio stated that they were swapped for safety reasons.

“It was basic logistics,” he explained. “The main dish line [went] all the way through the kitchen arena. We needed the middle cleared…. to make it less congested.”

Chavara also said that the Main Plate line will be at the entry on the right side of the center station, and that all other food stations have remained the same.

Assistant principal Greg Capocionni explained that there was also a risk of theft since the kids were directly beside the food while waiting in the Main Course line; he added that since there are around 300 students at each lunch, they wanted it to be less crowded.

Additionally, the deli station was closed for the time being because the panini presses stopped working; however, they are currently in the process of getting new ones.

“Until the deli station is able to function with working presses,” Chavara stated, “we will be full stocked with grab and go deli options in the cooler by the Tortilla station.”

The Aramark website states that their programs and service capabilities focus on driving meal participation; they aim to nourish students so they can reach their full potential. In this way, Aramark Student Nutrition is innovative and goes beyond the traditional cafeteria to serve students and staff in various ways.
